Pasta au gratin is a legacy of the court cuisine popularized by the ‘monzù’, a Neapolitan deformation of the French term ‘monsieur’ (sir), and involves a timbale of macaroni covered in breadcrumbs and seasoned with various ingredients. Distinguished from the traditional baked pasta, this version is not a single piece but rather soft, tender, and melting pasta under the crispy gratin layer. This vegan pasta bake with vegetables is a delightful twist on the classic recipe: no meat sauce or cheese. Instead, we have seasonal vegetables and vegan bechamel sauce.

Ingredients:

• 300g of penne pasta
• 0.5 liters of vegan bechamel sauce
• 1 carrot
• 1 zucchini
• 1 bell pepper
• 1 potato
• 1 broccoli
• Salt and pepper to taste
• Extra virgin olive oil to taste
• 2 tablespoons of breadcrumbs

Instructions on how to prepare the vegan pasta bake with vegetables:

  1. Cook the pasta in plenty of salted water for the time indicated on the package. Add the potatoes, peeled and cut into half-centimeter slices, to the pot with the pasta.
  2. Meanwhile, prepare the vegetables. Peel the carrot and remove the ends. Also, trim the ends from the zucchini. Using a large kitchen knife, dice all the vegetables into half-centimeter cubes. Rinse the bell pepper, remove the stem, seeds, and internal white filaments, and dice it like the other vegetables. Use a small knife to separate the broccoli into florets.
  3. Heat 3 tablespoons of oil in a large pan and add the vegetables. Cook them, stirring occasionally for 15 minutes, then season with salt and pepper. If the vegetables dry out too much during cooking, you can add a few tablespoons of water.
  4. When the pasta is ready, drain it and rinse it under cold water to remove excess starch and stop the cooking process. Transfer it to a large bowl and mix it with the vegetables and bechamel sauce.
  5. Stir well and transfer to an oven-safe dish. Sprinkle with breadcrumbs and bake at 200°C (about 392°F) for 20 minutes, or until a crust has formed.
  6. Serve the vegan pasta bake with vegetables hot. Enjoy!
